Paleo Meatloaf

Ah, The Ultimate Comfort Food…

Paleo Meatloaf

Meatloaf is very forgiving, you can add or subtract your favorite ingredients until you find your perfect combination. I left out the “tomato paste” element- & didn’t miss it, but many people swear by it. It’s up to you…

1 kg Ground Beef & Pork

1 Carrot (large) grated

1 Onion (large) minced

1 or 2 Celery Stalks- minced or just the leafy celery tops

50 g Almond Flour (I use my hand blender & grind up some toasted almonds)

2 Eggs

2 Garlic cloves, crushed


(Optional: Mustard)

Salt & Pepper

Cook in a 175*C oven for an hour or so (it will be deliciously brown & pulling away from the sides of the pan).

    Very nice, almonds add nice flavor, we made it last night and I had to control myself from ingesting too much comfort!

    I threw in a few minced sun-dried tomatoes and some all-spice as well—totally yummy recipe!!!

  • One of me and my husband’s favorite American comfort food is meatloaf and mash potatoes. We tried this recipe along with cauliflower mash and it was wonderful!

    BTW – I heard that you can find almond flour at bio stores in Prague, I’ve looked in a couple places and haven’t found it yet. Does anyone know where we could get it?

    Made it and it’s great! All the trouble I was fretting about w the almond flour was fine. I roasted them and borrowed Jason’s coffee grinder. They stick together but all in all got a half can of almond flour now! And the meatloaf is DIVINE! I put in cilantro and other herbs etc….
