Back by popular demand: Cauliflower Rice. This is such a simple yet satisfying addition to a meal; it’s definitely worth another look.
1 cauliflower (approximately 800g)
50g butter, olive or coconut oil
15-30ml (1-2 T) parsley or cilantro (or really, any herb that calls to you)
2 cloves garlic (chopped fine)
Pepper & salt
Coarsely grate the cauliflower- can be done on a hand-grater, in a food processor or with a trusty hand-held chopper.
Sauté garlic in butter or oil & then add cauliflower & herbs- cover briefly to soften; remove lid & stir until browned. Salt & pepper to taste. Easy peasy.
